Sissy’s Oven Pot Roast

This next recipe is from Dub’s sister Marie, whom they refer to as “Sissy.” It’s kinda funny seeing Dub and his brother, who is also a pretty good sized fellow, calling Marie, “Sissy” when she’s around.
Sissy is married to Dave, and they have two children, Jaycee who is a freshman at Auburn University, and her sister Madison. They live in North Carolina.
Sissy is the very same who supplied us with, and we passed along to you, “Sissy’s Broccoli Casserole.” Today we’ll share another of her recipes.
Sissy’s Oven Pot Roast:
- 3-4 pound rump or chuck roast
- 1 package onion soup mix
- All purpose flour
- 1 can cream of mushroom soup
- ¼ cup margarine or butter, melted
- ½ cup dry Vermouth or white wine
- 1 (4.5 ounce jar of whole mushrooms, un-drained
- Salt and pepper to taste
Dredge roast in flour; salt and pepper to season.
Brown roast in butter in skillet, then place roast in pot with lid.
Combine soup mix, mushroom soup, and wine; Pour over roast.
Cover and bake on 325 for 2-1/2 hours.
Take out and pour whole mushrooms over roast and bake an additional 30 minutes.
