Lately we’ve been throwing out some different salads for you, and Deb’s right, I do love a good, cold salad on a hot day. Honestly, they are so refreshing, had one for supper tonight, a number 1 wash tub full of it…fruit too.
But you know, I do love something sweet after supper. That’s my weakness, sweets! But good gracious, they are so good, with a big ole’ glass of ice-cold milk. Pie, cake, pudding, shoot, even an ole’ bag a M&M’s are hard to beat in a pinch!
I tell you, I used to love to chase the girls, but anymore about the only way I’d chase one, is if she had a homemade chocolate chip in her hand! That heifer’d be in big trouble then! Why don’t we make something sweet today?

“Hello Dolly” Candy
1 stick of butter
1 cup semi-sweet chocolate bits
1 cup graham cracker crumbs
1 cup chopped nuts
1 cup flaked coconut
15 oz. can sweetened condensed milk
Melt the butter in a 9”x9”x2” pan. Sprinkle in a layer each of graham cracker crumbs, coconut, chocolate pieces and nuts.
Pour condensed milk over the nuts.
Bake at 350 for 30 minutes. Cool in the pan. Cut into squares, and they’re “finger licking good!”

Banana Bread
3 eggs
1 teaspoon vanilla
2 cups sugar
1 cup nuts
1 cup Wesson oil
4 or 5 ripe bananas (squish by hand)
2 cups self rising flour
Grease tube pan. Beat all ingredients with a wooden spoon.
Pour all ingredients into tube pan. Bake on 350 for 1 hour.

‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!
Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end. But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.
Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.
Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
