-Ridin' out the Recession Recipes These recipes come from Mrs. Carolyn Davis. “Back in the day,” Mr. and Mrs. Davis were my second set of parents. Their son Jeff and I hung out together a lot…a whole lot! Jeff’s Dad, Mr. Davis was tough. He looked tough, and when he grabbed a hold of you…you knew you’d been grabbed ahold of! He was tough! When we got a little older, and into high school, Jeff and I, but mainly me, would get into his “Cold Duck.”

They both are great people, and I really enjoyed being around them. Mrs. Davis fed me on numerous occasions and I always remember it being good. After seeing these were her recipes, it kinda’ hurt my feelings though. You see, she never served them to me, and this tells me that they’d wait until I wasn’t around, then they’d have them. JC’s Momma’s Pecan Pie:
  • 3 eggs
  • 1/3 cup butter, or margarine, melted
  • 2/3 cup sugar
  • 1 cup pecan halves
  • 1 cup light corn syrup
  • Dash of salt
Beat eggs thoroughly. Mix with other ingredients. Pour into a 9 in. unbaked pastry shell, Bake in oven on 350 for 50 minutes or until knife comes out clean. Mrs. Carolyn Davis

What a Dessert!

  • 28 (or more) oreo cookies, crushed
  • 1 teaspoon vanilla
  • ¼ cup melted margarine
  • 4 squares semi-sweet chocolate
  • ½ gallon vanilla ice cream
  • 6 tablespoons margarine
  • 1 cup sugar
  • 1 large Cool Whip
  • 1 cup toasted pecans
Mix cookies and ¼ cup margarine. Spread in 9x13 inch pan; freeze. Soften ice cream. Spread over cookies and refreeze. Bring to boil the sugar, milk, chocolate, and margarine. Boil 1 minute. Cool completely. Pour over ice cream and freeze. Mix Cool Whip with nuts and pour over chocolate. Freeze until serving time. Mrs. Carolyn Davis

‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!

Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end.  But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.

Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.

Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
