-From Home Cookin and Ridin out the Recession Have you ever had a day you just feel, drained? Well if so, you feel exactly like we do here in Miz Judi’s Kitchen. We sure hope she don’t run us off because of it! In honor of our lazy mood today, we’re taking a couple of recipes from Shelly Mae’s Church Cookbook, and the first we find quite appropriate! We hope you enjoy them!

Lazy Day Chicken:

  • 2 cans mushroom soup
  • 1 cup milk
  • 1 cup rice (uncooked)
  • 1 package onion soup mix
  • Chicken pieces
Mix mushroom soup. Add dry soup mix and milk and pour all into an oblong baking dish. Sprinkle rice over mixture evenly, and top with chicken pieces. Cover with foil and bake on 350 for 1-1/2 hours. Karen Goza

Grits Casserole:

  • ½ cup grits
  • 1-1/2 cups grated sharp cheese
  • 3 cups milk
  • 4 large eggs
  • 1 teaspoon salt
  • ½ stick of butter
Cook grits, milk and salt until milk is absorbed. Mix in ½ stick of butter and sharp cheese and the 4 large eggs. Pour into a casserole dish. Bake on 350 for 1 hour. Nancy Thomas (Shelly Mae’s Grandmother)

‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!

Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end.  But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.

Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.

Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
