Ruthie’s Fried Chicken, Dubs Beenie Weenies

Alright…you guys want to try some good fried chicken? It’s the best I’ve ever eaten, and being in the South like so many of us are, we’ve eaten plenty of fried chicken! This is very simple, and Mom started doing this I don’t know how many moons ago. If you have tried it this way, you know how good it is, if not, you gotta’ try it.

I’ve been sittin’ on this one for a while now…just holding it. Deb used to ask me, “Dub, why don’t you put your Mama’s fried chicken recipe up? I’d tell her, “Deb, if our column Ridin’ Out the Recession, doesn’t work out, then shoot, why would I want to give out my Mama’s chicken recipe? Heck, that means they wouldn’t read us, but they’d done gone and got off with one a my Mama’s best recipes, are you crazy??” Well, you guys have been just super to Deb and I, and just to show my appreciation for you all being just wonderful people, I’m gonna give you her recipe…next Easter! No, I’m just picking at you guys, but once more, this makes a really good plate of fried chicken! Ruthie’s Fried Chicken
  • 1 chicken, cut up
  • 1 box regular Shake and Bake seasoning
  • Self-rising flour
Get you a gallon zip-lock or a small paper sack. Preheat your frying pan with grease. Measure out two packs of the Shake and Bake Seasoning into a cup. After measuring it out, measure an equal amount of self-rising flour. Combine both in the ziplock bag. Take two to three chicken pieces and drop them into the bag. Shake until each piece is coated well. Drop these into the hot, frying pan, and repeat until pan is full, or chicken is all coated and in pan. If you were to need more seasoning repeat process. If you’re doing several chickens just repeat. Cook until done. Dubs Beenie Weenies: This is quick, economical, very little mess, and our kids and our grandkids love them. I’d be willing to bet that yours will too! Red can eat a washtub full, by himself! I love them too once in a while. I don’t know what amounts of ingredients I use, I just taste test as I go along. 1 pack BEEF hotdogs! Don’t be trying to slide them ole pork, chicken, or turkey things in on me! I use BEEF!
  • 2 cans pork and beans
  • brown sugar
  • A dab of maple syrup
  • some mustard
  • Some ketchup
  • Onion (if only for me. Kids don’t like em)
  • Salt and Pepper to taste
Boil your hotdogs. In another pot mix all other ingredients, bring to a quick boil, then simmer. After your BEEF hotdogs are done, cut them up into little bite-size pieces, and add them to the other ingredients. Simmer 15-20 minutes. That’s it. One other suggestion. We like to take this and put this into a hotdog bun. Everybody loves them this way, and what falls out, just spoon up and eat, or dip it up with a tater chip! Um, um!

‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!

Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end.  But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.

Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.

Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
