Once again we’re hitting up ole Shelly Mae. I believe she’s coming for her recipe book this weekend, so we’ve been making copies and pulling some up for you guys as we go along. Don’t fret though, if she gets too pushy we’ll just lock the dern gate and that’ll put an end to that! This recipe sounds really good and Shelly Mae said it is delicious! Deb and I’ll be tryin’ this one for sure!

Shelly Mae’s Blackberry Cake:

Combine and beat for 2 minutes:
  • 1 box yellow cake mix
  • 1 3oz. box blackberry jello
  • ¾ cup of oil
  • * ½ cup blackberries, cooked
  • ½ cup blackberry juice
  • 4 eggs
*cook blackberries in ¼ cup of water. Now bake all ingredients following directions for baking on box.

Icing/Glaze

½ stick butter ½ box powdered sugar ½ cup drained blackberries Combine butter and sugar in small sauce pan to simmer. Add blackberries. Ice cake while warm.

Shelly Mae’s Fried…..Green Beans

Now here’s one I’ve never heard of, but will probably end up trying this, if for nothing else, curiosity! Shelly Mae’s Fried…..Green Beans?? (you gotta’ be kiddin’ me!)
  • 1 cup (lager) beer (starting off good, huh)
  • 1 cup flour
  • 2 tsp. salt
  • ½ tsp. pepper
  • Whisk together.
  • Dip green beans in batter, fry in peanut oil @ 375 until golden brown. Let cool. (Dub says go ahead and drink another cup or two of beer while cooling).

    ‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!

    Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end.  But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.

    Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.

    Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
