Sissy’s Broccoli Casserole:
  • 1 package frozen chopped broccoli
  • 1 small jar cheese whiz
  • 1 cup uncooked rice
  • ½ cup evaporated milk
  • 1 can small can sliced mushrooms
  • ½ stick margarine
  • 1 can cream of chicken soup
  • 1 medium chopped onion
Steam broccoli and cook rice. Saute onion in margarine until onion is transparent (I asked Sissy what’s transparent? She said, it’s clear, and I asked, then why didn’t you just say until onion is clear? Women!) Anyway, once onion is clear, mix all ingredients. Pour into a greased casserole dish. Bake on 350 until brown and bubbly…about 45 minutes. Let stand a few minutes. We hope you enjoy the recipes, and can’t wait for you to come back and visit with us again! ‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!

Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end.  But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.

Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.

Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
