Wendy’s Baked Chicken Thighs

Speakin of sharing, here's a reader who's contributed a couple times already since the inception of "Miz Judi's Kitchen." Her name is Wendy and she's sent a recipe she'd like to share with us all. In the true spirit of what this column is all about, this recipe is based on fillin a belly, while stretchin a dollar.

Here is a recipe that will stretch the dollar. It won't exactly classify as gourmet, but no one has ever starved at my house.

Wendy's Baked Chicken Thighs:

  • Ramen noodles (chicken flavored)
  • 1 can Campbells cream of chicken soup
  • 2 chicken thighs baked
  • 1 celery stalk chopped up
  • 1cup milk
  • ½ teaspoon thyme
  • salt and pepper to taste
Cook the noodles according to the package, place the baked thighs over the noodles. Mix the soup, milk, thyme and celery together and pour it over the chicken and noodles. Add salt and pepper to taste. Bake this covered at 350 degrees for 20 minutes. This is an easy one to make in larger batches and I like it because you can cook up the chicken the day before, put it in the casserole dish and bake it up when you get home. --Wendy Thanks so much Wendy great job! ‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!

Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end.  But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.

Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.

Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
