Hamburger and Eggs, Miz Judi Style

Today people, I’m gonna share a recipe with ya’ll that is a little different, and actually it does surprise me the people I know who’ve never tried it, it’s hamburger and eggs. It’s not something you’d want day after day, but honestly Deb and I both like it for supper once in awhile.

You can add whatever you’d like to “# it up some,” and in today’s economy it’s “stretchin a dollar,” plus is simple to make with very little cleanup.

Hamburger and Eggs, Miz Judi Style:

  • ½ lb. hamburger meat
  • 5 eggs
  • 1 small onion
  • ½ bell pepper (cleaned and chopped)
  • ¼ small pack of mushrooms
  • ½ to 1 cup grated cheese of your choice, and your own discretion as to how much cheese
Preheat skillet and coat bottom with oil. Break up hamburger into little pieces, and chop onion, pepper, and mushrooms. Add all into skillet and cook over low med. to med. heat until hamburger is done. Take out and drain. Put all into skillet again, this time adding eggs and cheese. Cook until eggs are done. Take out and serve. Can be eaten with grits, hashbrowns, home fries, etc. We also sometimes put this onto those flour tortilla wraps and spoon chili sauce over it, then roll wrap to close it. This is actually very good.

‘Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen’!

Note to Readers: There are a few things that Dub doesn’t know but one thing he does know is that the word ‘Riding’ (as in Riding Out the Recession) is spelled with a ‘g’ at the end.  But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin’ country folk.

Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren.

Both love to cook, love to laugh, grow a garden, and generally try to “aggravate” most anyone around them basically…all in good fun, of course!
