'Ridin Out The Recession With Dub and Deb in “Miz Judi’s Kitchen'! Note to Readers: There are a few things that Dub doesn't know but one thing he does know is that the word 'Riding' (as in Riding Out the Recession) is spelled with a 'g' at the end. But Dub not only walks the walk, but speaks like he is: down home, true blue, and plain speakin' country folk. Dub and Deb are both native Floridians, live in Central Florida, and run a small business as well. They have five children, and seven grandchildren. Both love to cook, love to laugh, grow a garden, and generally try to "aggravate" most anyone around them basically...all in good fun, of course!

Re: Rising food and fuel prices From: Gary The revolts in the middle east didn't start because they discovered Twitter, it's because the cost of food grains has doubled in the past 9 months. And here's a little trivia. According to the EIA, the US turned 5.1 billion bushels of corn into ethanol in 2010. For perspective that 5.1 billion bushels would give 1 lb of corn to 780 million people every day for a year. Just sayin'

Reader feedback From: Larry Dear Dub and Deb, Made me laugh. Several summers ago, about 50 plus or minus, I took my trip to the "Big Lake"! My Uncle Bob had been in an auto accident and was in a wheel chair. He could drive but not get around very well on his own. He was a little crazy on a good day! Anyway, his Dad had a trailer park on Marathon Key and Uncle Bob decided to drive from De Land to Marathon with myself and his three small children. He sold it as a better place to convalesce for awhile. I think he wanted to get away from my Mother’s younger sister! We had one of those crazy trips that all kids love. We stopped at all those eccentric roadside tourist traps. We saw wigwams, snake pits, alligator farms, the largest Magnolia Tree, biggest Cypress, we saw it all! We all decided to go to the "Big Lake".

-From Riding' out the Recession Dave Rankin is a good friend of my Mama’s and Dad’s, and all the family as well. Dave’s a great guy and loves my Mom to death. Dave’s been in the banking business for many, many years, and I believe may have been all his life. I was going through Mama’s recipes, and ran across one Dave had tossed in the hat. I don’t think I’ve banked with Dave before but got to thinking this morning…”You know what Dub? Things are indeed tough right now, and with that said, these tough times may continue to deteriorate, and literally become really, really, tough times!”

Ruthie’s Chip Beef Dip:

-From Riding' out the Recession This recipe is a dip and it’s a dern good one too! My Mama has made this numerous times and it’s always a hit. We were going through some of Mama’s recipes this morning and there it was, laying on top in one of her recipe books. I pointed out in the yard and told Deb, “LOOK!” Soon as she turned to look, I grabbed this recipe & took off upstairs! Gotcha Deb! Simple, quick, economical, and oh so good!

Shelly Mae’s Cornbread Bake

Today we’re gonna share some more recipes out of our daughter-in-law Shelly Mae’s Cookbook. She just hates when I refer to her as “Shelly Mae,” instead of just Shelly, don’t you, Shelly Mae? Josh, our oldest son, and Shelly Mae’s husband got Deb and I started on this kick and I’m sure he’s heard an earful over getting it started! I’ve got to hurry up and use the recipes we’d like to share from her cookbook as she’s already started, “You through with my cookbook yet?” Women! This recipe is an example of a full meal which is both economical and tasty.

From: Larry Just wanted to drop you folks a line. I have enjoyed your column for a while. Being and old "Cracker" myself, I was born and raised in De Land. I have closely read your writings on food storage. It brought back memories. You see we thought store bought canned goods were a luxury! My Granddad would plant field peas in his orange grove, my Grannie and I would spend hours "stripping" peas for storage. He traded oranges for molasses, pecans, beans, well you get the picture and my Grannie would put them up. I live in New Orleans now but, still have a place in De Land. Our orange grove has been decimated by citrus greening and "other" diseases. We are now planting watermelons until we come up with another crop. Guavas and oranges go well together to fight the Asian diseases that are killing all the trees. At 62, I have lots of ideas and not so much time. Thank you for your articles.
